Recipe post: chorizo, cheddar and rosemary savoury scones

Hello again! Today I decided to post up a little recipe that I adapted from one I found online here to make savoury chorizo, cheddar and rosemary scones. 

I baked them again today and not only do they taste delicious, but they also fill your kitchen with the most amazing smell. What a win-win situation. These scones make perfect breakfasts on the go, lunches with a side of tomato soup or just a snack loaded with melted butter (my favourite of all the options.) 

1) Preheat your oven to 180 degrees and then mix 300g of self-raising flour, 1 1/2 teaspoons of baking powder and 75g of unsalted butter in a food processor until the mixture resembles coarse breadcrumbs.

2) Fry up 75g of diced chorizo and add to the mixture along with 60g of grated cheddar cheese and a handful of fresh chopped rosemary. 

3) Slowly pour in 200ml of milk and one beaten egg to the mixture and mix until it forms a ball of dough.

4) Sprinkle flour on a clean surface and then turn the mixture out onto it, before rolling to form a rectangular piece of dough roughly 1 1/2 inches thick. Use a sharp knife to cut the dough into around 12 squares. 

5) Sprinkle flour on a baking sheet, place the dough squares onto it and coat them with an egg wash made up of one beaten egg and a pinch of salt, before putting them in the oven for around 15 minutes or until golden brown. 

Voila! Gorgeous savoury scones in around half an hour. Perfect to store in an airtight tin for around a week (not that they'll last that long here!)
