Chocolate Peanut Butter Banana Muffins

Hey lovelies! Another week and still no camera-hopefully soon! So the photos on this post have been taken on my completely shoddy phone camera, no iphones here!


Lately I've become a little bit obsessed with baking muffins, they're healthier than cupcakes because you don't need to cover them in frosting and I love how they get all crunchy on the outside and stay all fluffy and gooey on the inside. (Homer style drooling.) 


I'd started running low on the Sweet Potato Muffins I posted about last Monday so I whipped these together and bunged them in the oven with my fingers crossed and I'm not going to lie, they are deliiiicious! They're probably slightly more calorific than the sweet potato ones, but hey, at least they still have fruit in them! (Pretend they're one of your five a day to make yourself feel better about eating two...) 




Ingredients:

  • 2 bananas
  • 3 tablespoons of vegetable oil
  • 50g crunchy peanut butter (or a bit more if you just love it!)
  • dark chocolate chips (as many as you fancy-I used all of a little bag)
  • 80ml milk
  • 1/2 teaspoon of salt
  • 280g of self raising flour
  • 200g of caster sugar
  • 1 egg

Recipe:
  1. Preheat oven to 180 degrees C
  2. Mash the bananas in a bowl and add one egg, the oil and the milk and mix together
  3. In a separate bowl add the flour, sugar and salt
  4. Mix the wet ingredients into the dry ingredients and whisk together into a batter
  5. Add the chocolate chips and peanut butter and mix together
  6. Grease a muffin tray and divide the mixture between the little muffin-y dips
  7. Bake for around forty minutes but I checked every five minutes after the first thirty. (push a knife in the middle and if it comes out clean they're done)
  8. Leave to cool, or eat one straightaway and burn your tongue.
